Fire up the flavour with this homemade Jerk paste! Packed with aromatic spices and fiery scotch bonnets, it's perfect for marinating meats and adding a kick to any dish.
Ingredients:
- 90 g allspice
- 90 g nutmeg
- 90 g cinnamon
- 570 g white onion, finely chopped
- 75 g spring onion, finely chopped
- 100 g garlic, minced
- 100 g sugar
- 80 g sea salt
- 200 ml cider vinegar
- 150 g scotch bonnet peppers, finely chopped
- 150 g ginger, minced
- 20 g thyme, fresh or dried
Instructions:
Preparation:
- Chop the vegetables: Finely chop the white onion, spring onion, scotch bonnet peppers, and mince the garlic and ginger.
- Measure all ingredients: Ensure all ingredients are accurately measured before starting the blending process.
Combine Dry Spices:
- In a large mixing bowl, combine the allspice, nutmeg, and cinnamon.
- Mix the dry spices together until well combined.
Blend Vegetables and Aromatics:
- In a food processor, add the finely chopped white onion, spring onion, minced garlic, minced ginger, and scotch bonnet peppers.
- Process until the mixture is smooth and well-blended.
Add Dry Spices to the Blend:
- Gradually add the dry spice mixture to the blended vegetables in the food processor.
- Pulse to combine, ensuring the spices are evenly distributed throughout the mixture.
Incorporate Sugar and Sea Salt:
- Add the sugar and sea salt to the mixture.
- Pulse again until the sugar and salt are fully integrated into the blend.
Add Wet Ingredients:
- Pour in the cider vinegar.
- Add the thyme to the mixture.
- Process until the mixture is smooth and consistent.
Taste and Adjust:
- Taste the mixture to check for balance. Adjust the seasoning if needed, adding more salt or sugar to taste.
Store Properly:
- Transfer the spice blend to clean, airtight containers.
- Store in the refrigerator. Allow the mixture to sit for at least a few hours, preferably overnight, to let the flavours meld together.
