This vibrant stir-fry is a quick and easy way to enjoy fresh vegetables. Tossed in a rich Moi Moi Sauce, it's a burst of flavour and a perfect weeknight meal.
Ingredients:
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 cup broccoli florets
- 1 cup Moi Moi Sauce
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Cooked rice for serving
- Sesame seeds for garnish
Instructions:
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the red bell pepper, yellow bell pepper, zucchini, red onion, and broccoli to the skillet.
- Stir-fry the vegetables for 5-7 minutes, until they are tender but still crisp.
- In a small bowl, mix together Moi Moi Sauce, soy sauce, and sesame oil.
- Pour the sauce mixture over the vegetables and toss to coat evenly.
- Cook for an additional 2-3 minutes, until the sauce is heated through.
- Serve the stir-fried vegetables over cooked rice, garnished with sesame seeds.
