Korean BBQ Style Moi Moi Sauce Ribs

Ingredients

For the ribs:

  • 1.5kg pork spare ribs
  • 1 tsp sea salt
  • ½ tsp black pepper

For the glaze:

  • 200ml Moi Moi Sauce (XO or Original)
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, grated
  • 1 tsp grated ginger

To serve:

  • 2 spring onions, sliced
  • Toasted sesame seeds
  • Steamed rice or pickled slaw (optional)

Method

  1. Cook the ribs. Preheat the oven to 160°C (140°C fan). Season the ribs with salt and pepper, then place them in a roasting tin. Cover tightly with foil and roast for 2 hours until tender.

  2. Make the glaze. In a bowl, mix Moi Moi Sauce, honey, soy sauce, sesame oil, garlic, and ginger until smooth.

  3. Glaze and finish. Remove the ribs from the oven and turn the heat up to 220°C. Brush the ribs generously with the glaze, then return to the oven uncovered for 15 minutes, basting halfway through until glossy and caramelised.

  4. Serve. Slice between the bones, scatter with sesame seeds and spring onions, and serve with rice or slaw.

Chef’s Tip

Once the ribs are glazed, let them rest for 5 minutes before slicing - the sauce thickens and clings beautifully. For extra char, finish them under a hot grill for a minute or two.
