Moi Moi Sauce Marinated Chicken Skewers

Ingredients

For the skewers:

  • 600g boneless chicken thighs, cut into chunks
  • 150ml Moi Moi Sauce Original
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1 red pepper, cut into pieces
  • 1 red onion, cut into wedges
  • 1 tbsp vegetable oil
  • 1 tsp sea salt

To serve:

  • Flatbreads or rice
  • Fresh lime wedges

Method

  1. Marinate the chicken. In a bowl, mix Moi Moi Sauce, soy sauce, sesame oil, and honey. Add the chicken pieces, toss to coat evenly, and cover. Leave to marinate for at least 30 minutes - longer if you can.

  2. Build the skewers. Thread the marinated chicken, red pepper, and onion onto skewers, alternating pieces for colour and even cooking.

  3. Cook. Heat a grill pan or barbecue over medium-high heat. Brush with oil, then cook the skewers for 10-12 minutes, turning often and brushing with any remaining marinade until the chicken is cooked through and lightly charred.

  4. Serve. Plate up with flatbreads or rice, and finish with a squeeze of lime for freshness.

Chef’s Tip

If you’re cooking indoors, finish the skewers under a hot grill for a minute or two to get that proper smoky edge. And don’t skip the lime - it cuts perfectly through the glaze’s rich sweetness.
