Moi Moi Sauce Pork Belly Ramen

Ingredients

For the pork belly:

  • 400g pork belly slices
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 100ml Moi Moi Sauce Original

For the broth:

  • 1 litre chicken stock
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sesame oil

For the ramen:

  • 200 g ramen noodles
  • 2 soft-boiled eggs, halved
  • 2 spring onions, sliced
  • 1 sheet nori, cut into strips

Method

  1. Roast the pork belly. Preheat the oven to 200°C (180°C fan). Mix Moi Moi Sauce, honey, and soy sauce to make a glaze. Brush over the pork belly and roast for 45 minutes, turning halfway, until caramelised and tender.

  2. Prepare the broth. In a saucepan, combine chicken stock, soy sauce, mirin, and sesame oil. Warm gently over low heat while the pork cooks.

  3. Cook the noodles. Boil the ramen noodles according to packet instructions, then drain and divide between bowls.

  4. Assemble the ramen. Pour the hot broth over the noodles, top with slices of the glazed pork belly, the halved eggs, spring onions, and nori strips. Serve immediately.

Chef’s Tip

Brush the pork with a final spoon of Moi Moi Sauce as soon as it comes out of the oven. It sets into a glossy glaze that clings to the meat and gives the broth that deep, savoury finish.
