Moi Moi Sauce Breakfast Burrito

Ingredients

For the filling:

  • 4 rashers streaky bacon (or 2 sausages, crumbled - optional swap)
  • 3 eggs
  • 1 tbsp butter
  • 100g grated cheddar or Monterey Jack cheese
  • ½ red pepper, diced
  • ½ small red onion, finely diced
  • 1 small avocado, sliced
  • 2 tbsp Moi Moi Sauce Original

For the wrap:

  • 2 large flour tortillas
  • 1 tsp olive oil or butter (for toasting)

To serve:

  • Extra Moi Moi Sauce for dipping
  • Fresh coriander or chives (optional)

Method

  1. Cook the bacon. Fry the streaky bacon in a non-stick pan until crisp. Remove and set aside. If using sausages instead, cook until golden and crumbly.

  2. Sauté the vegetables. In the same pan, add the diced pepper and onion. Cook for 2-3 minutes until softened, then set aside.

  3. Scramble the eggs. Add butter to the pan. Once melted, pour in the beaten eggs and stir gently until softly scrambled. Season with salt and pepper, then remove from the heat - they’ll keep cooking off the heat.

  4. Assemble the burrito. Warm the tortillas slightly to make them pliable. Spread Moi Moi Sauce down the centre, then layer on scrambled eggs, vegetables, cheese, avocado, and bacon.

  5. Wrap and toast. Fold in the sides, roll up tightly, and toast the burritos seam-side down in a dry pan with a little olive oil or butter until golden and crisp all over.

  6. Serve. Slice in half, serve warm, and dip into extra Moi Moi Sauce for that hit of sweet, spicy flavour.

Chef’s Tip

Don’t overfill the wrap - a neat roll makes all the difference when toasting. If you like it saucier, add a spoon of Moi Moi Sauce inside and serve extra on the side for dunking.
