Moi Moi Sauce Glazed Salmon Salad

Ingredients

For the salmon:

  • 2 salmon fillets (about 150g each)
  • 1 tbsp olive oil
  • Salt and black pepper
  • 80ml Moi Moi Sauce Original
  • 2 tbsp honey

For the salad:

  • 100g mixed salad leaves
  • ½ avocado, sliced
  • ½ cucumber, shaved into ribbons
  • 6-8 cherry tomatoes, halved
  • 1 tbsp toasted sesame seeds

For the dressing:

  • 1 tbsp olive oil
  • 1 tsp rice vinegar
  • ½ tsp soy sauce
  • Pinch of salt

Method

  1. Glaze the salmon. In a small bowl, mix Moi Moi Sauce with honey. Pat the salmon dry, season with salt and pepper, and brush generously with the glaze.

  2. Cook the salmon. Heat olive oil in a non-stick pan over medium heat. Cook the salmon skin-side down for 3-4 minutes, then flip and cook for another 2-3 minutes until caramelised and cooked through.

  3. Make the salad. In a large bowl, toss the salad leaves, avocado, cucumber, and cherry tomatoes. Whisk together the dressing ingredients and drizzle over the top.

  4. Assemble. Place the glazed salmon fillets on top of the dressed salad and sprinkle with sesame seeds.

Chef’s Tip

Let the salmon rest for two minutes before serving - the glaze sets into a glossy coating and the fish stays tender. If you want extra punch, drizzle a little extra Moi Moi Sauce over the top right before serving.
