Moi Moi Sauce Glazed Tofu with Stir-Fried Noodles

Ingredients

For the tofu:

  • 300g firm tofu, pressed and cut into cubes
  • 1 tbsp cornflour
  • 1 tbsp sesame oil
  • 150ml Moi Moi Sauce Original

For the noodles:

  • 200g egg noodles
  • 1 carrot, julienned
  • ½ red pepper, sliced
  • 2 spring onions, chopped
  • 1 tsp soy sauce
  • ½ tsp sesame oil

To serve:

  • Fresh coriander (optional)
  • Lime wedge (optional)

Method

  1. Crisp the tofu. Toss the tofu cubes in cornflour until evenly coated. Heat sesame oil in a non-stick pan and fry the tofu on all sides until golden and crisp.

  2. Glaze the tofu. Reduce the heat to low, add Moi Moi Sauce, and toss gently to coat the tofu. Let it simmer for 1–2 minutes until sticky and glossy.

  3. Cook the noodles. Boil the noodles according to packet instructions, then drain. In another pan, stir-fry the carrot, pepper, and spring onions for 2–3 minutes. Add soy sauce, sesame oil, and the noodles, tossing everything together until hot and well combined.

  4. Serve. Divide the noodles between bowls and top with the glazed tofu. Garnish with coriander and a squeeze of lime if you like.

Chef’s Tip

For a crispier texture, let the tofu sit untouched in the hot pan for a minute after adding the glaze - it caramelises slightly, giving that chewy, restaurant-style finish.
