Moi Moi Sauce Lamb Chops

Serves: 2-3
Time: 45 minutes (plus marinating)

Ingredients

For the lamb chops:

  • 6 lamb chops
  • 150ml Moi Moi Sauce Original
  • 1 tbsp olive oil
  • 1 tsp chopped rosemary
  • ½ tsp black pepper
  • ½ tsp sea salt
  • Lemon wedges, to serve

For the side (optional):

  • 400g baby potatoes, boiled and buttered
  • Handful of green beans or tenderstem broccoli

Method

  1. Marinate. In a shallow dish, mix Moi Moi Sauce, olive oil, rosemary, pepper, and salt. Add the lamb chops and coat thoroughly. Cover and marinate for at least 1 hour, or overnight for a deeper flavour.

  2. Cook the lamb. Heat a griddle or frying pan over medium-high heat. Once hot, cook the chops for 3-4 minutes on each side, depending on thickness, until browned and slightly charred on the edges.

  3. Rest and serve. Transfer the chops to a warm plate and let them rest for 5 minutes before serving. Serve with the potatoes and greens, and finish with a squeeze of lemon over the top.

Chef’s Tip

After cooking, brush each chop with a little extra Moi Moi Sauce while they rest. The residual heat helps the glaze melt into the meat, giving it that glossy, flavour-packed finish.
