Crispy Fried Oyster Mushrooms with Moi Moi Sauce Dip

Ingredients

For the mushrooms:

  • 250g oyster mushrooms, torn into large pieces
  • 100g plain flour
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • 120ml cold sparkling water
  • 200ml vegetable oil, for frying

For the dip:

  • 100ml Moi Moi Sauce Original
  • 2 tbsp mayonnaise
  • ½ tsp lemon juice

To serve:

  • Pinch of smoked paprika (optional)
  • Lemon wedge (optional)

Method

  1. Make the batter. In a bowl, mix the flour, paprika, garlic powder, and salt. Gradually whisk in the sparkling water until you have a light, smooth batter - not too thick, it should coat the back of a spoon.

  2. Heat the oil. Pour the oil into a deep frying pan and heat to 180°C. You can test it by dropping in a bit of batter - it should sizzle and rise to the top.

  3. Fry the mushrooms. Dip each piece of mushroom into the batter, shake off any excess, and fry in batches for 3-4 minutes until golden and crisp. Don’t overcrowd the pan or the temperature will drop.

  4. Drain and season. Remove with a slotted spoon and place on kitchen paper to drain. Sprinkle with a pinch of salt while hot.

  5. Make the dip. Mix Moi Moi Sauce, mayonnaise, and lemon juice in a small bowl until smooth.

  6. Serve. Arrange the crispy mushrooms on a plate with the dip on the side, and finish with a dusting of smoked paprika if you like.

Chef’s Tip

Fry in small batches so the oil stays hot and the mushrooms stay crisp. Once you try them fresh out of the pan with that sweet, sticky dip, you’ll see why this one never lasts long.
