Pan-Seared Scallops with a Moi Moi Sauce Mayo

Ingredients

For the scallops:

  • 6 large scallops, cleaned and patted dry
  • 1 tsp olive oil
  • 1 tbsp butter
  • Sea salt and black pepper

For the Moi Moi Sauce mayo:

  • 2 tbsp mayonnaise
  • 1 tbsp Moi Moi Sauce
  • ½ tsp lemon juice

To serve:

  • Fresh herbs or microgreens (optional)
  • Lemon wedges

Method

  1. Prepare the scallops. Pat the scallops completely dry on kitchen paper and season lightly with salt and pepper.

  2. Sear. Heat olive oil and butter in a non-stick pan over medium-high heat until hot and foaming. Add the scallops and sear undisturbed for about 1½ minutes per side, or until golden brown and caramelised. Don’t overcrowd the pan - work in batches if needed.

  3. Make the mayo. In a small bowl, mix the mayonnaise, Moi Moi Sauce, and lemon juice until smooth.

  4. Serve. Arrange the scallops on a plate, spoon or dot the Moi Moi mayo alongside, and finish with herbs or microgreens for colour. Add a squeeze of fresh lemon just before serving.

Chef’s Tip

The secret is in the sear - make sure your pan is hot and your scallops are dry. You want that golden crust and tender centre. The Moi Moi Sauce mayo cuts through the richness perfectly, adding just the right hit of heat and depth.
