
Fast, fresh, and full of colour - this vibrant stir-fry brings your everyday veg to life. Tossed in a rich glaze of Moi Moi Sauce, soy, and sesame oil, it’s the perfect weeknight dish: quick to cook, packed with flavour, and endlessly versatile.
Ingredients
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 courgette, sliced
- 1 red onion, sliced
- 100g broccoli florets
- 150g Moi Moi Sauce Original
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Cooked rice, to serve
- Sesame seeds, to garnish
Method
- Heat the olive oil in a large wok or frying pan over medium-high heat.
- Add the red pepper, yellow pepper, courgette, red onion, and broccoli.
- Stir-fry for 5–7 minutes, until the vegetables are just tender but still crisp.
- In a small bowl, whisk together the Moi Moi Sauce, soy sauce, and sesame oil.
- Pour the sauce over the vegetables and toss well to coat. Cook for 2–3 minutes, until everything is evenly glazed and heated through.
- Serve the stir-fried vegetables over steamed rice, sprinkled with sesame seeds. Add crispy tofu, prawns, or thinly sliced chicken to make it a complete meal. For extra crunch, finish with a handful of toasted cashews or peanuts.
Chef's Tip
For the best texture, cook the vegetables quickly over a high heat so they stay vibrant and crisp. If using chicken, pork, or prawns, stir-fry the protein first, set aside, then add it back in once the sauce has coated the vegetables.
